Makes 4 portions

8 little boys beef, chili and paprika sausages

Tomato base sauce

  • 4 200gm potatoes (washed and with skin on)
  • 50gm grated Colby cheese
  • 1½ Tsp whole grain mustard
  • 1 tsp chopped fresh parsley
  • 25gm butter
  • Salt and pepper to taste
  • Your favorite sauce or chutney

Bake potatoes in 200.c oven for 1 hour or until cooked
Remove from oven, cut of the top 1/3 off each potato and remove the insides retaining the skin as a case
In a medium bowl mix the hot potato, butter, whole grain mustard, cheese, parsley, salt and pepper. Once well mixed, divide into four and refill the potato skins and top with a little cheese. Return to oven for 5 minutes.
Cook beef sausages as per packet and serve with the potatoes and your favorite sauce.
