Chicken and Herb little boys omelette
2 little boys chicken and herb (sliced)
- 3 eggs
- 10ml cream
- ˝ tsp chopped chives
- 30gm feta
- 1Tsp sliced red onion
- 1Tsp sun dried tomatoes
- salt and pepper
- Mix the cream, eggs, chives and salt and pepper.
In a medium heat pan add a little oil and then add the sausages and onions and lightly colour
Add the egg mix, sun dried tomatoes and using a fork bring the cooked egg mix to the centre allowing the uncooked mix drain to the sides.
Once just cooked through fold the omelette to a cigar shaped and serve hot Jeremy’s Suggestions

with their favourite sauce. For a quick and tasty starter split the ‘little boys’ length-ways, grill
and serve them with sautéed artichokes and balsamic onions.
Jeremy’s Advice
little boys have been made with care. For best results cook them with the respect they deserve. No need to pierce the casings.
Cook your little boys in a pan or grill using a medium heat for two – three minutes each side. Treat little boys like you would a quality steak,
when ready they should spring back from a press test. Serve & enjoy.
