1 Packet little boys lamb rosemary and garlic sausages (cut into 5 pieces each)

  • 20ml olive oil
  • 300gm kumara in 1cm dice
  • 100gm diced red onion
  • 100gm feta
  • 100gm diced vine tomatoes

Egg mix

  • 4 eggs
  • 200gm milk
  • Salt
  • Pepper
  • Chopped thyme
  • Chopped parsley

Pre heat oven to 180.c
Mix the eggs, milk, herbs and seasoning together in a bowl and mix well.
In a 30cm oven proof fry pan add oil and over a medium heat add the kumara dice Cook until soft, add the lamb sausage pieces and cook for a further three minutes Add the onion, feta and tomato, lightly season. Top with the egg mix and place in the oven for 25-35minutes or until the eggs is cooked through.

Serve hot and garnish with chopped parsley and a nice salad to accompany the frittata.
