1 packet of little boys duck and porcini sausages
200gm fresh pasta sheets cut in 12cm*18cm pieces

Tomato base sauce

  • Tomato base sauce
  • 50gm white onion
  • 1 clove crushed garlic
  • 400gm tinned crushed tomatoes
  • 50ml red wine
  • ½ tsp sugar
  • ½ tsp Oregano
  • 1 tsp Basil
  • Salt and pepper
  • Parmesan
  • Balsamic vinegar

In a pot sweat the onions and the garlic until soft
Add the tomatoes, red wine and sugar
Cook for 20 minutes on low heat and season with the herbs and salt and pepper
Puree or blend. Set aside

Blanch the pasta sheets in hot water and refresh in cold water to stop the cooking
Wrap two sausages in each sheet and in a baking dish place1/3 of the tomato sauce in the base of the dish. Top with the four cannelloni’s, top with the rest of the sauce. Sprinkle over with parmesan Bake in 180.c oven for 18-24 minutes until sausages are cooked, finish with a little balsamic vinegar and serve hot.
